We often look for the ripest fruit in the supermarket, but green bananas are actually better for you!!

Green bananas may provide some additional nutrients and benefits that yellow bananas do not. They are rich in resistant starch and pectin, which are filling, improve digestive health, and help with lower blood sugar levels. However, some people do find that green bananas have a slightly bitter taste, and are naturally harder in texture.

The green the banana is when you eat it, the lower is glycaemic index. This means that is raises blood sugar levels less quickly after eating, and gives you a slower energy supply in the hours after tucking in.
The riper the banana, the bigger the blood sugar spike, and the more insulin your body needs to produce to deal with it.

Green bananas are higher in starch than yellow bananas. Yellow bananas, by contrast, are higher in natural sugars such as sucrose, glucose and fructose. This is because the ripening process converts the banana's starch into sugar. According to the website Hungry Chef Diets, the type of starch contained in green bananas is resistant starch, which makes you feel fuller and helps you burn fat more quickly. This tough fiber is not digested in the small intestine, but is passed on to the large bowel.
